North Pearl chicory, pear, and goat cheese quiche

Instructions

  • 1.   1. Rinse the chicory, remove the stems, and finely slice them. Melt the butter in a pan, and add the chicory. Season with salt and pepper. Cook for 5 minutes over fairly high heat, stirring regularly. Drain and let it rest.


    1. In a bowl, mix the eggs with the liquid cream and sour cream. Season with salt and pepper.




    1. Wash and dry the pears. Cut them in half, remove the core, and slice them.




    1. Cut the goat cheese log into slices.




    1. Line a pie dish. Place a layer of chicory, add the pear slices and goat cheese slices. Cover with the egg and cream mixture. Sprinkle with grated cheese and bake in a preheated oven at 180 degrees Celsius for 30 minutes.



    Enjoy hot or warm, accompanied by a nice green salad.

  • 15 cl of thick sour cream
  • 25 g of grated emmental
