1. Blend all the ingredients for the batter, except for the coconut oil, until smooth. Let it rest in the fridge for 30 minutes.
2. Preheat the waffle iron. Using a brush, grease the plates with coconut oil and pour a small ladle of batter onto each plate. Let it cook for 4 to 5 minutes. Repeat the process until all the batter is used.
3. Once cooked, drizzle the waffles with honey and sprinkle with cinnamon.
