Zucchini and basil terrine

Instructions

  • 1.   Cook the zucchini in a pan with a little olive oil. Drain them and set them aside.
  • 2.   Beat the eggs in an omelette with cream, salt, and pepper. Add the basil and zucchini.
  • 3.   Cook in a loaf pan (which does not need to be buttered) in a water bath, in a fairly hot oven (375°F/190°C) for 45 minutes.
  • 4.   Unmold.
