Foolproof Butternut Squash Velouté

The squash season has arrived! Potimarron, pumpkin, butternut... But how do you cook them? We propose a simple and perfect recipe for autumn/winter: a velouté! Instructions

  • 1.   Hollow out the squash, peel it, and cut it into coarse pieces.
  • 2.   In a large saucepan, melt some butter. Sauté the minced onion in it, and add the butternut cubes.
  • 3.   Sauté everything for about 5 minutes, then cover with water. Add the bouillon cube, salt, pepper, and bring to a boil.
  • 4.   Once the mixture is boiling, cover and let it cook for 25 minutes over medium heat.
  • 5.   Put everything in the blender, and add the liquid cream that you have previously heated. Blend until smooth.
  • 6.   And there you have it, your Butternut Squash Velouté is ready!
