Instructions

  • 1.   Peel and finely slice the shallots.
  • 2.   Remove the outer layer of the leeks, then wash them. Cut them in half lengthwise and slice them.
  • 3.   Heat a sauté pan with the butter. Add the shallots and sauté for 3 minutes. Add the leeks, season with salt and pepper, and sweat them for 5 minutes. Reduce the heat and let them cook for another 10 minutes.
  • 4.   Zest the lemon finely and then squeeze it. Mix the lemon juice and the heavy cream and add them to the leeks. Continue cooking for 5 minutes.
  • 5.   Preheat the broiler. Place a generous spoonful of creamy leeks on each scallop shell, top with a scallop, add the lemon zest, and season with pepper.
  • 6.   Broil for 5 minutes and serve immediately.
