Instructions

  • 1.   Making the cold soup: Peel and deseed the cucumber. Blend it with a good amount of mint. Add the yogurt, sour cream, vinegar, and lemon juice. Season with salt and pepper. Blend again.
  • 2.   Chilling time: Chill for 1 hour, adding a few ice cubes.
  • 3.   Topping and serving: Just before serving, garnish with radish slices, croutons, and mint leaves.

  • 1 cucumber
  • 1 stalk of fresh mint
  • 6 radishes
  • ½ untreated lemon
  • 50 cl of 0% Greek yogurt
  • 1 tablespoon of sour cream
  • 1 tablespoon of Sherry vinegar
  • 4 tablespoon of crouton
  • salt (according to taste)
  • pepper (according to taste)
