Instructions

  • 1.   Start this soup recipe by washing the radish greens thoroughly to remove any sand. Wash the leek, peel the onion, peel the potato, and cut all these vegetables into pieces.
  • 2.   Heat the oil in a pot. Add the vegetables and sauté for 5 minutes, without browning. Add the radish greens, crumble the bouillon cube, season with salt and pepper, cover with enough cold water. Bring to a boil and let it cook for 20 minutes on low heat.
  • 3.   Once the vegetables are cooked, add half of the cream and blend with an immersion blender or in a blender. Adjust the seasoning. Chill for 2 hours.
  • 4.   Pour the soup into bowls. Drizzle with the remaining cream. Sprinkle with chervil and serve cold.

  • 1 onion
  • 1 leek white
  • 1 potato
  • 1 vegetable bouillon cube
  • 20 cl of liquid fresh cream
  • 1 stalk of fresh chervil
  • 2 tablespoon of oil
  • salt (according to taste)
  • pepper (according to taste)
