Instructions

  • 1.   Beat the eggs with the sugar until you obtain a fluffy mixture.
  • 2.   Add the melted butter and mix.
  • 3.   Add the vanilla sugar, baking powder, 2 teaspoons of baking soda, and then the flour.
  • 4.   Mix well to obtain a smooth batter.
  • 5.   Add the cream, grated coconut, and milk, then mix.
  • 6.   Weigh the batter and divide it into 6 equal parts to make 6 small sponge cakes (approximately 250g per sponge cake).
  • 7.   Take the batter for the first sponge cake and mix in 3 drops of food coloring.
  • 8.   Pour the batter into a square sponge cake mold.
  • 9.   Bake for 10 minutes at 180°C (350°F).
  • 10.   Repeat the process 6 times to obtain the 6 sponge cakes or bake them 2 by 2 :)
  • 11.   Whisk the mascarpone and add the cooled melted white chocolate.
  • 12.   Beat for several minutes to obtain a frosting.
  • 13.   Take the first sponge cake and add a layer of frosting, cover with the second sponge cake and another layer of frosting.
  • 14.   Repeat the process with the 6 sponge cakes, then smooth the top and sides.
  • 15.   Chill in the refrigerator.
  • 16.   Pour the cream into a well-chilled dish.
  • 17.   Beat it and add powdered sugar to obtain a thick cream.
  • 18.   Cover the entire Rainbow Cake with the whipped cream, smoothing it well.
  • 19.   Sprinkle with grated coconut if you like :)

Notes & Suggestions

  • I replaced the 100g of grated coconut from the original recipe with powdered almonds.

  • 500 g of mascarpone
  • 400 g of white chocolate
  • Glaçage extérieur :
  • 50 cl of heavy cream
  • 100 g of powdered sugar
