Cucumber Tzatziki (Greece)

Instructions

  • 1.   Peel and grate the cucumber, then let it drain in a colander (the trick is to salt the cucumber to make it release its liquid faster).
  • 2.   In a bowl, mix the yogurt, oil, vinegar, pepper, and crushed garlic clove.
  • 3.   Finely chop or cut the mint into very small pieces and add it to the bowl.
  • 4.   "Squeeze" the grated cucumber to remove excess liquid and add it to the mixture. Season with salt if necessary and mix well.
  • 5.   Chill for at least 2 hours before serving.
