Smoked salmon and chives omelette

Instructions

. Beat the eggs with salt and pepper, add some of the smoked salmon in strips and the chopped chives.

. Cook the beaten eggs in a pan with a little butter, add the remaining salmon, then fold the omelette.

. Serve the omelette hot, ideally with a green salad or seasonal vegetables.
