Grenoblois: walnut and coffee cake

Instructions

  • 1.   Start this Grenoblois coffee cake recipe by blending the walnut kernels. Combine the sugar and egg yolks in a bowl, then whisk them with an electric mixer until the mixture becomes pale. Add the black coffee, blended walnuts, and cornstarch, then mix.
  • 2.   Preheat the oven to 180 °C (350 °F). Whisk the egg whites with a pinch of salt in another bowl. Gently fold them into the previous mixture. Grease a round cake pan and pour the batter into it. Bake for about 40 minutes, keeping an eye on the browning.
  • 3.   Remove the cake from the oven, let it cool slightly, then unmold it onto a cooling rack to cool completely.

  • 20 g of butter
  • 1 pinch of salt
  • 5 cl of black coffee
  • 150 g of powdered sugar
  • 2 tablespoon of coffee extract
  • 12 walnut kernels
