Instructions

  • 1.   Start this key lime pie recipe by crushing the biscuits into powder. Then mix them with melted butter and brown sugar. Line the bottom and sides of the mold with this dough and refrigerate for at least 30 minutes. Preheat the oven to 180 °C (350 °F). Bake the pie crust for 15 minutes, let it cool, and refrigerate again.
  • 2.   Beat together the egg yolks and finely grated lime zest. Gradually add the condensed milk and continue beating for 4 to 5 minutes. The mixture should thicken gradually. Reduce the mixer speed and slowly add the juice of 5 limes (about 25 cl or 1 cup).
  • 3.   Pour the mixture into the chilled pie crust. Bake for 20 minutes at 180 °C (350 °F).
  • 4.   Remove the pie from the oven and let it cool. Place it in the fridge for 2 hours before serving.
  • 5.   Before serving, thinly slice the clementine, lime, and orange and arrange them harmoniously on one side of the pie.
  • 6.   Serve with whipped cream by beating together the cream and powdered sugar.

  • 60 g of brown sugar
  • 25 cl of light cream
