Instructions

. In a saucepan, mix the butter and flour over low heat until the mixture becomes foamy.

. Be careful: do not let it brown! Add the milk all at once.

. Season with salt and pepper.

. Bring to a boil while stirring with a wooden spoon until thickened, then let simmer for a few minutes.

. Add a pinch of nutmeg. Off the heat, stir in the egg yolk and grated gruyère cheese into the béchamel sauce. Mix well.
