Mornay Sauce Recipe

This is the recipe for a classic sauce perfect for gratins.

Instructions

  • 1.   In a saucepan, mix the butter and flour over low heat until the mixture becomes foamy.
  • 2.   Be careful: do not let it brown! Add the milk all at once.
  • 3.   Season with salt and pepper.
  • 4.   Bring to a boil while stirring with a wooden spoon until thickened, then let simmer for a few minutes.
  • 5.   Add a pinch of nutmeg. Off the heat, stir in the egg yolk and grated gruyère cheese into the béchamel sauce. Mix well.

  • 500 ml of milk
  • 1 pinch of nutmeg
  • 50 g of grated Gruyère cheese
  • 1 egg yolk
  • salt (according to taste)
  • pepper (according to taste)
