. * Preheat the oven to 200°C (400°F).
Cut the sweet potatoes in half and bake them for 30 minutes.
Meanwhile, finely chop the onion and mushrooms that have been carefully washed.
Cut the chestnuts into pieces.
Melt the butter in a pan and add the vegetables.
Sauté everything for 10 minutes.
Season with salt and pepper, then add some fresh parsley.
Mix the vegetables with the cheddar cheese.
Remove the sweet potatoes from the oven and scoop out the flesh with a spoon.
Add the filling and bake for another 15 minutes to melt the cheese and brown the potatoes. It's ready! Serve hot with a sprinkle of parsley.
