Butternut squash puff pastry with goat cheese and cumin

Instructions

  • 1.   Preheat the oven to 180°C (350°F)
  • 2.   Peel, seed, and cut the red kuri squash into cubes.
  • 3.   Place them in a pot of salted boiling water for 5 to 7 minutes until the pumpkin cubes are tender. Drain and mash the squash into a puree. Set aside.
  • 4.   Cut the goat cheese log into slices.
  • 5.   Spread the squash puree in the center of each puff pastry square. Place slices of goat cheese on top. Sprinkle with cumin and sprinkle with tarragon. Fold the puff pastry squares and bake for 20 to 25 minutes until the pastries are golden brown. Serve hot!
