Instructions

  • 1.   1. Separate the cauliflower into florets and wash them in vinegar water. Rinse well and put them in boiling salted water for 20 minutes.
  • 2.   2. Prepare the béchamel sauce: melt the butter and add the flour while stirring. Add the cold milk and cream while stirring. Bring to a boil, stirring constantly, until the mixture thickens. Season with salt, pepper, and a pinch of nutmeg.
  • 3.   3. Cut the comté cheese into very small cubes and add half of it to the béchamel sauce.
  • 4.   4. Put the cauliflower florets in a gratin dish, add the béchamel sauce, and sprinkle the remaining comté cheese and the second pinch of nutmeg on top.
  • 5.   5. Bake in a preheated oven at 180°C for about 10 minutes.
    Serve hot!
