Instructions
1. 1. Separate the cauliflower into florets and wash them in vinegar water. Rinse well and put them in boiling salted water for 20 minutes.
2. 2. Prepare the béchamel sauce: melt the butter and add the flour while stirring. Add the cold milk and cream while stirring. Bring to a boil, stirring constantly, until the mixture thickens. Season with salt, pepper, and a pinch of nutmeg.
3. 3. Cut the comté cheese into very small cubes and add half of it to the béchamel sauce.
4. 4. Put the cauliflower florets in a gratin dish, add the béchamel sauce, and sprinkle the remaining comté cheese and the second pinch of nutmeg on top.
5. 5. Bake in a preheated oven at 180°C for about 10 minutes.
Serve hot!
