Instructions

  • 1.   Start your cucumber, avocado, and goat cheese salad recipe by peeling and slicing the cucumber into thin rounds. Peel and cut the beet into thin sticks. Open the avocado, remove the pit, and peel it. Dice it into cubes. Cut the cheese into pieces. Crush the walnuts. Rinse and separate the salad leaves.
  • 2.   In a bowl, mix the lemon juice, 4 tablespoons of olive oil, salt, pepper, a few pinches of chili, and the seeds.
  • 3.   Arrange the salad, cucumber, avocado, cheese, beet, chopped basil, and walnut kernels on a serving dish. Drizzle with the dressing and refrigerate until ready to serve.
