Zucchini-Mimolette Invisible Cake

It is called "invisible" because this cake contains much more vegetables than batter!

Instructions

  • 1.   Peel and chop the garlic and onion, then sauté them in a pan with olive oil.
  • 2.   Preheat the oven to 180 °C (350 °F).
  • 3.   Whisk the eggs with melted butter, add salt, then gradually incorporate the flour while mixing until you obtain a homogeneous batter. Add the milk little by little.
  • 4.   Wash the zucchini, peel the potatoes. Cut everything into thin slices, about 1 mm thick (if possible using a mandoline). Incorporate the vegetable slices, garlic, and onion into the batter. Cut the mimolette into thin slices.
  • 5.   Grease and flour a 24 to 25 cm (9 to 10 inch) loaf pan.
  • 6.   Pour a little bit of the batter into the pan, cover it with a layer of mimolette slices, then cover with more batter, followed by another layer of mimolette, and so on until the pan is filled.
  • 7.   Bake for about 1 hour and 15 minutes. Check the doneness with a knife blade.
  • 8.   Let it cool for about ten minutes, then unmold. Decorate with a few zucchini slices.
  • 9.   Serve hot or warm, with a small arugula or mixed greens salad.

  • 200 g of potato
  • 120 g of mimolette
  • 2 eggs
  • 1 onion
  • 1 garlic clove
  • 30 g of melted butter
  • 80 g of flour
  • 10 cl of whole milk
  • 1 tablespoon of olive oil
  • salt (according to taste)
  • pepper (according to taste)
