Instructions

  • 1.   In a large bowl, mix the dry ingredients: flour, baking powder, sugar, a pinch of salt, and a packet of vanilla sugar.
  • 2.   In another bowl, mix the 2 egg yolks with the milk, then add to the dry ingredients while mixing. You will obtain a thick pancake batter-like texture. Let it rest for 15 to 30 minutes.
  • 3.   Beat the egg whites until stiff peaks form, then gently fold them into the batter (this is the secret to ultra-soft pancakes).
  • 4.   Cook in a well-heated, buttered small pan for 1 minute on each side.
  • 5.   The edges should be golden brown, and small bubbles should form on the top. This is the moment to flip the pancake!
