Today, I propose a recipe for strawberry jam shortbread cookies. Shortbread is an excellent cake to accompany your coffee with milk, and every year to celebrate Eid al-Fitr, I always offer a new recipe for shortbread cookies.

  • 1.   Today, I propose a recipe for Strawberry Jam Shortbread Cookies.
  • 2.   Shortbread is an excellent cake to accompany your coffee with milk, and every year to celebrate Eid al-Fitr, I always offer a new recipe for shortbread cookies.
  • 3.   A very tender recipe with strawberry jam, with a guaranteed beautiful effect!! There are several ways to achieve tenderness in shortbread, either by using butter or by adding cornstarch to the flour. In this version, I will only use flour and therefore slightly increase the amount of butter in proportion to the other ingredients. An easy and fragrant recipe with a hint of vanilla that has won over many.
  • 4.   In a bowl, mix the softened butter with the sugar and vanilla sugar, and mix well.
  • 5.   Add the flour to obtain a smooth dough, and refrigerate for 30 minutes.
  • 6.   Roll out the dough with a rolling pin and use a cookie cutter to cut out circles or diamonds, half with holes and half without holes.
  • 7.   Place everything on a baking sheet lined with parchment paper. Bake in a moderate oven (180°C), and watch carefully, they should not brown. Remove them when they are still white, as they harden during baking.
  • 8.   Brush the shortbread cookies without holes with jam, then stick the cookies with holes on top.
  • 9.   Serve the Strawberry Jam Shortbread Cookies with a good mint tea.

  • 100 g of powdered sugar
  • 1 egg
  • 1 bag of vanilla sugar
  • 1 pinch of salt
  • 200 g of jam
