Tomato Eggs

A Chinese dish, a little different from the others. The eggs are cooked with a tomato-based sauce. Serve this dish for lunch or dinner, accompanied by rice or whatever you desire!

Instructions

  • 1.   Finely chop the onions and sauté them with oil in a sauté pan.
  • 2.   After 5 minutes, add the white wine. Let it simmer until 3/4 of the white wine has evaporated.
  • 3.   Then add the tomatoes, salt, pepper, and curry.
    Cook over medium heat for 15 minutes, uncovered.
  • 4.   Next, add the yogurt and mix. Crack 4 eggs into the dish.
    Cover and cook for 5 minutes, until the whites become opaque.
  • 5.   Serve immediately so that the yolk doesn't have time to harden.

  • 1 tablespoon of olive oil
  • 1 plain yogurt
  • 1 teaspoon of curry powder
  • 1 pinch of salt
