Vanilla Tapioca Pudding

Instructions

  • 1.   In a saucepan, pour the milk, split the vanilla bean in half, open it up and scrape out the seeds, and add them to the milk.
  • 2.   Add the brown sugar and salt.
  • 3.   Bring to a boil over medium heat, stirring occasionally with a wooden spoon.
    Let it steep for about 30 minutes, then remove the vanilla bean.
  • 4.   Return to medium heat and bring to a boil again, then add the tapioca pearls.
    Reduce the heat and stir occasionally.
  • 5.   Serve either warm for dessert or chill for at least 2 hours.
