Instructions

  • 1.   In a microwave-safe pitcher, place the butter and cook covered in the microwave for 30 seconds (750W). Then add the flour, mix well with a whisk and dilute with milk. Whisk the mixture well to prevent any lumps from forming. Cook covered for 2 minutes, open, whisk the mixture and cook again for 2 minutes and 30 seconds in the microwave. After cooking, add salt, pepper, and nutmeg. Mix well to obtain a smooth sauce.

Notes & Suggestions

  • Variations:
    - Curry Béchamel: add 15ml of curry powder to the flour.
    - Cream Béchamel: replace the milk with 300ml of chicken broth and 100ml of heavy cream.
    - Mushroom sauce: blend 100g of sliced mushrooms. Cook them with 15ml of olive oil in the microwave for 2 minutes, then add them to the basic béchamel sauce.
    - Cheese sauce: add 50g of grated cheese (Emmental, Comté, or Parmesan) to the béchamel.
    - Soubise sauce: cook 2 finely chopped onions with 25ml of oil in the microwave for 3 minutes. Then add them to the béchamel.
  • Suggestions:
    - Curry Béchamel: serve with fish.
    - Cream Béchamel: serve with poultry.
    - Mushroom sauce: serve with red meat.
    - Cheese sauce: excellent base for making lasagna, endives, or leeks with ham.
    - Soubise sauce: serve as a side dish for meat, or use as a filling for crepes or galettes.
