Coconut Rice Pudding with Mango using the Companion

This gives it an Asian touch and makes it particularly creamy and flavorful. The coconut rice pudding is served with a mango compote flavored with lime, simple and fruity. The recipe is super simple, especially with the Companion, as you don't need to stand in front of your saucepan constantly stirring the rice to prevent it from burning :P

Instructions

  • 1.   Place 500 grams of semi-skimmed milk, 150 grams of coconut milk, 125 grams of round rice, 1 pinch of salt, and 30 grams of powdered sugar in the bowl of the Companion fitted with the mixer. Cook for 30 min/95°C/speed 3.
  • 2.   Cut the mangoes into small cubes of about 2 cm and place them in a saucepan.
  • 3.   Squeeze the juice of 1 lime into the saucepan with the mango.
  • 4.   Briefly bring to a boil, then remove from heat and let cool slightly.
  • 5.   Transfer to dessert cups or ramekins. The coconut rice pudding will thicken as it cools.
  • 6.   Add the mango compote on top of the coconut rice pudding.
  • 7.   Sprinkle 1 tablespoon of grated coconut on the ramekins just before serving.
  • 8.   Sprinkle lime zest on the ramekins just before serving.
  • 9.   Serve warm or cold.
