Instructions

  • 1.   Drain and rinse the chickpeas, put them in a salad bowl. Blanch the tomatoes, peel them and cut them into cubes. Rinse the cucumber, partially peel it leaving 1 stripe of skin out of 2, also cut it into small cubes. Peel the onion, slice it into thin rounds and then into small strips. Put all the prepared ingredients in the salad bowl and stir.
  • 2.   In a bowl, whisk the oil and lemon juice with the yogurt. Add the mint, salt and pepper. Pour this sauce over the composed salad and stir. Rinse, dry and roughly chop the spinach leaves, pluck the coriander. Incorporate them into the salad. Chill for 10 minutes before serving.

  • 200 g of chickpeas (canned, drained weight)
  • 4 tomatoes
  • 1 cucumber
  • 1 onion
  • 1 teaspoon of olive oil
  • 1 teaspoon of lemon juice
  • ½ 0% Greek yogurt
  • 15 g of fresh mint
  • 50 g of spinach sprout
  • 4 g of fresh coriander
  • 1 pinch of salt
  • 1 pinch of pepper
