1. Wash and slice the mushrooms.
2. Peel and mince the garlic.
3. Cut the tofu into small cubes.
4. Heat a pot of water and cook rice or pasta according to package instructions.
5. In a sauté pan, heat 2 tablespoons of olive oil. Add the garlic. Sauté for 1 minute, then add the mushrooms.
6. Cook over high heat until the mushrooms release their water and it reduces (about 10 minutes).
7. Add the tofu and mix. Cook for 5 minutes to lightly brown the tofu.
8. Over medium heat, add the cream. Season with salt and pepper. Stir regularly.
9. When serving, add the chopped parsley.
