White asparagus soup

Instructions

  • 1.   Peel the asparagus and cut them into 4 or 5 centimeter pieces. Keep the tips aside.
  • 2.   Melt the butter in a saucepan, sprinkle with flour and pour in the boiling water. Add the asparagus and season with salt and pepper.
  • 3.   Simmer for 30 minutes, then blend and strain through a fine sieve to remove the fibers.
  • 4.   Reheat over low heat with the tips for 10 minutes. Off the heat, add the beaten egg yolk with the cream.
  • 5.   Adjust the seasoning and sprinkle with freshly grated nutmeg.
  • 6.   Serve in hot plates.
