Patacons

Patacons are originally cooked in a special utensil called a "cloche". The children's pleasure at the time was to scrape off the first layer of patacons that had stuck to the dish!

Instructions

  • 1.   Cut the potatoes into thick slices, as well as the onions.
  • 2.   In a clay terrine, place a few pieces of butter to prevent sticking.
  • 3.   Alternate a layer of potatoes, a layer of onions, and butter, forming a cloche shape. Add your bouquet garni halfway through.
  • 4.   Cook in the oven, not too hot, at 150°C to 180°C (300°F to 350°F) for about 1 hour and 30 minutes, or on low heat.
