Zucchini, Goat Cheese, and Red Bean Patties with No Sugar and Low Glycemic Index

Zucchini, goat cheese, and red bean patties. To replace meat or for dinner. It's filling, delicious, and of course, it's low glycemic index and even gluten-free. Perfect.

Instructions

  • 1.   For 9 patties:
    - 1 zucchini
    - a little garlic and onion
    - 125g of red beans (GI=35)
    - 2 eggs
    - 20g of chickpea flour (GI=35)
    - 30g of oat bran (GI=15)
    - 50g of walnuts (optional)
    - 90g of goat cheese, cut into pieces
    - 2 tsp curry powder
  • 2.   1. Cook zucchini, garlic, and onion in pieces in a pan with 2 tbsp of olive oil.

    1. Mash the red beans with a fork.


    2. Mix everything together and cook small portions in the shape of patties in a pan.

  • 3.   Enjoy with salad/raw vegetables.
