The killer gratin: sweet potato, eggplant, and gorgonzola As I mentioned, sweet potato has a glycemic index of 50, which is relatively low compared to regular potatoes, especially when combined with the fiber from the eggplant and the fat from the cheese, which will lower the overall glycemic index of the recipe. Instructions

  • 1.   Slice the sweet potato and cook it in boiling water for 5 minutes.
  • 2.   Slice the eggplant and chop the shallot.
  • 3.   In a baking dish, alternate layers of eggplant, sweet potato, and gorgonzola cheese.
  • 4.   Sprinkle with herbs and shallots.
  • 5.   Bake for 25 minutes at 220°C.
