1. BÉCHAMEL SAUCE (using a Companion here, but easy to adapt):
In the robot's bowl fitted with the beater attachment, add the flour and milk, along with salt, pepper, and nutmeg.
Using the Companion: 1 minute, speed 7.
2. Add the butter in pieces.
Using the Companion: Sauce, 8 minutes, speed 4, 90°C.
3. Once the béchamel sauce is ready, keep it warm in the Companion until ready to pour over the dish.
4. THE GRATIN
While the béchamel sauce is cooking, cut the Swiss chard into pieces (preferably small for the white parts).
5. Place the Swiss chard in a baking dish.
6. Pour the béchamel sauce over it and top with grated cheese.
7. Bake at 190°C (375°F) in a "Convection + Steam" setting for 25 minutes (still, keep an eye on it).
Notes & Suggestions
If your oven doesn't have a steam function, you will need to steam the Swiss chard before adding it to the gratin.
