Instructions

  • 1.   Heat a medium non-stick skillet over medium heat.
  • 2.   In a bowl, whisk together the egg, egg white, salt, and pepper. Add the egg mixture to the skillet. Cook gently, stirring the mixture with a spatula for about 2 minutes.
  • 3.   Add the tomatoes, green onions, and cheese. Reduce the heat to low and cook until the eggs are set, about 1 more minute.
  • 4.   Serve on a slice of toasted bread.
