Instructions

. Cook the quinoa in water and toast the almonds in a dry pan. Set aside.

. Sauté the minced onion and chopped garlic in olive oil.

. Add whole cherry tomatoes and spinach leaves. Cook over medium heat for 10 minutes.

. Add washed red beans and tomato sauce and heat through.

. Pour in the hot quinoa and add the spices. Mix well.
6
. Serve on a plate, garnish with small pieces of burrata cheese, minced green onions, and almonds.
Notes & Suggestions
Piri piri is a spice.
