Porcini Mushroom Ravioli

Instructions

  • 1.   Pour the flour into a bowl. Add the egg yolks, olive oil, and water. Knead for several minutes until you obtain a homogeneous dough ball. If needed, add a little flour or water. Wrap the ravioli dough in plastic wrap and refrigerate for 30 minutes.
  • 2.   Rinse the porcini mushrooms under cold water and finely chop them. Pour into a bowl. Add the ricotta, salt, and pepper. Mix well.
  • 3.   Roll out the ravioli dough thinly on a lightly floured work surface. Cut out circles using a cookie cutter. Place a teaspoon of filling in the center of each ravioli. Fold each ravioli in half and seal the edges well.
  • 4.   Heat a pot of salted water. Cook the porcini mushroom ravioli for 3 to 4 minutes. Drain and serve hot.
