1. Cook the potatoes in salted water.
2. Roughly mash them with a fork, with a little butter and heavy cream.
3. Add the feta and a few tablespoons of feta juice. Mash and mix well.
4. Add 1 egg and mix vigorously if the mashed potatoes are still hot.
5. Prepare 3 plates: 1 with flour, 1 with two beaten eggs, 1 with breadcrumbs.
6. Heat a pan with a piece of butter and a little oil to prevent it from burning (more will need to be added during cooking).
7. Take about a large spoonful of mashed potatoes, roll it in flour, and shape it into a 1 cm thick galette.
8. Then dip it in the egg, and coat it in breadcrumbs. Sauté in the pan for 3 minutes on each side.
9. They can be made in advance and reheated in the oven.
10. Serve as a side dish with meat or with a green salad for a TV dinner!
