Leek and Sweet Potato Mini Tians

Instructions

  • 1.   Steam or boil peeled and diced sweet potatoes until cooked.
  • 2.   Sauté finely sliced leeks in two-thirds of the butter and oil for 10 minutes over medium heat, then add crushed garlic and cook for another minute.
  • 3.   Turn off the heat, add the drained sweet potatoes and feta cheese to the leeks. Distribute the mixture into buttered mini muffin silicone molds.
  • 4.   Beat the eggs with 1 or 2 cartons of cream (depending on the size of the eggs), season with salt and pepper. Distribute the mixture into the molds.
  • 5.   Bake for 35 to 40 minutes in a preheated oven at 350°F.
  • 6.   Allow to cool slightly outside the oven, unmold and serve with a salad or as a side dish with meat and vegetables.
