Instructions

  • 1.   For 6 to 8 people, preheat the oven to 210°C (410°F).
  • 2.   Remove the seeds from the zucchini and blend on Turbo speed. Scrape down the sides with a spatula and set aside in a small dish.
  • 3.   Place the butter, salt, pepper, and 150g (5.3 oz) of water in the bowl and cook for 5 minutes at 90°C (194°F) on speed 1.
  • 4.   Add the flour and mix for 10 seconds on speed 1, then 1 minute and 20 seconds on speed 3.
  • 5.   Rinse the bowl under cold water for 10-15 seconds to cool the dough.
  • 6.   Set the Thermomix to speed 5 and add the eggs one at a time through the lid hole every 10 seconds, letting it run for 30 seconds.
  • 7.   Add the 100g (3.5 oz) of blended zucchini to the dough and mix for 30 seconds on speed 2.
  • 8.   Using 2 small spoons or a piping bag, place mounds of dough on a sheet of parchment paper.
  • 9.   Sprinkle grated Gruyère cheese on the gougères and bake in the oven for about 20 minutes at 210°C (410°F).
  • 10.   Ideal for an appetizer.
