Frozen pea and mint smoothie

Instructions

  • 1.   The velouté:
  • 2.   *Cook the peas in boiling water with the bouillon cube for 15 minutes.
  • 3.   *Drain the peas and keep some of the broth. Put it in the fridge.
  • 4.   *Pass the peas through ice water to preserve their color.
  • 5.   *Blend the peas with the yogurt, mint, garlic, and cooled broth.
  • 6.   *Strain through a sieve or fine mesh strainer and keep the "pea puree."
  • 7.   Season to taste and refrigerate.
  • 8.   For the dippers:
  • 9.   *Spread the pea puree on the bread and place the sliced goat cheese on top.
  • 10.   *Bake until the cheese melts. Cut the bread slices into small pieces.
