Camembert and Apple Bricks

Instructions

  • 1.   Preheat the oven to 190 °C (375 °F). Peel the apples, remove the core, and cut them into 8 equal quarters. Place them in a glass casserole dish with lemon juice and butter. Cover tightly, cook for 4 minutes in the microwave (750 W), and stir halfway through cooking. Transfer to a sieve.
  • 2.   Cut the camembert into 4 equal portions. Lay a sheet of phyllo dough on a work surface. Arrange 8 apple quarters on top, then cover with a portion of camembert sliced into strips. Sprinkle with thyme and pepper. Fold into a triangle. Repeat the process to make 4 bricks.
  • 3.   In a bowl, dilute the egg yolk with a little water. Using a brush, brush the bricks with the egg yolk. Place them on a non-stick baking sheet and bake for 7 to 8 minutes, flipping halfway through cooking. Create a bed of salad on the plates, spray with oil twice. Season with salt and pepper. Place the bricks on top.
