Chickpea and Feta Salad | 4 servings 2 bowls

Prepare this delicious Mediterranean salad in advance to let the flavors blend.

Instructions

  • 1.   In a salad bowl, mix the chickpeas, garlic, scallions, bell pepper, parsley, olives, feta cheese, and lemon zest. Mix well.
  • 2.   In a small bowl, prepare the dressing by mixing the oil and lemon juice. Pour over the salad and season with pepper. Let it sit for at least 30 minutes before serving.

  • 350 g of chickpeas (canned, drained weight)
  • 2 garlic cloves
  • 2 stalk of spring onion
  • ½ red bell peppers
  • 5 teaspoon of parsley
  • 9 Greek-style black olives
  • 75 g of feta
  • 1 tablespoon of olive oil
  • 3 tablespoon of lemon juice
  • 1 pinch of pepper
  • 1 lemon
