Skillet Eggplant Tart | 4 Servings WW

Instructions

  • 1.   Mix the flour, yeast, olive oil, 2 teaspoons of yogurt, and a pinch of salt. Work until you obtain a soft dough, adding a little water if necessary. Wrap in plastic wrap and set aside at room temperature.
  • 2.   Slice the eggplant into rounds and cook on the barbecue or grill, drizzling with oil and sprinkling with thyme leaves. Season with salt and pepper. Mix the remaining yogurt with sesame seeds.
  • 3.   Preheat a 20 cm diameter skillet.
    Roll out the dough into a disc of the same diameter on a non-stick baking sheet and place it in the skillet. Brush it with the sesame mixture, then arrange the eggplant slices on top. Place the halved cherry tomatoes in the center. Cook over high heat for 10 to 15 minutes (the cooking time depends on the thickness of the skillet), until the crust is crispy.
    Serve immediately.
