Instructions

  • 1.   Preheat your oven to 180 °.
  • 2.   Peel the sweet potato, cut it into small cubes and cook it in a pan with a little water for 10 to 15 minutes, covered.
  • 3.   Meanwhile, peel the onion, cut it finely and cook it in 1 tbsp of oil in a second pan.
  • 4.   Wash and cut the zucchini into pieces and add them to the onion. Let it cook.
  • 5.   Meanwhile, mix the oatmeal in a blender to reduce them to flour. Then add the eggs, skyr, unsweetened almond milk, salt and pepper. Mix again.
  • 6.   Crumble the feta.
  • 7.   In a salad bowl, mix the liquid preparations with the cooked zucchini, the cooked sweet potato and 2/3 of crumbled feta cheese. Mix.
  • 8.   Pour the preparation into a tart mold, lined with baking paper beforehand.
  • 9.   Bake at 180 ° C for 30 minutes.
  • 10.   Take out of the oven and sprinkle with the rest of the feta.
