Sweet Potato Crustless Quiche

Instructions

  • 1.   Preheat your oven to 180°C (350°F).
  • 2.   Peel the sweet potato, cut it into small cubes, and cook it in a pan with a little water for 10 to 15 minutes, covered.
  • 3.   Meanwhile, peel the onion, finely chop it, and cook it in 1 tablespoon of oil in a separate pan.
  • 4.   Wash and cut the zucchini into pieces and add them to the onion. Let them cook.
  • 5.   Meanwhile, blend the oat flakes in a blender to turn them into flour. Then add the eggs, skyr, unsweetened almond milk, salt, and pepper. Blend again.
  • 6.   Crumble the feta cheese.
  • 7.   In a bowl, mix the liquid mixture with the cooked zucchini, cooked sweet potato, and 2/3 of the crumbled feta cheese. Mix well.
  • 8.   Pour the mixture into a tart pan lined with parchment paper.
  • 9.   Bake at 180°C (350°F) for 30 minutes.
  • 10.   Remove from the oven and sprinkle with the remaining feta cheese.

  • 300 g of skyr
  • 1 onion
  • 300 g of zucchini
  • 15 cl of almond milk
  • 1 tablespoon of olive oil
  • 160 g of feta
  • salt (according to taste)
  • pepper (according to taste)
