Pasta and Zucchini Gratin with Fresh Goat Cheese

A quick and easy gratin that will surely delight goat cheese and zucchini lovers.

Instructions

  • 1.   Start by peeling and finely chopping the shallot and garlic, and dice the zucchini.
  • 2.   Bring a large pot of salted water to a boil, add the pasta and cook for 1 to 2 minutes less than usual. Once cooked, drain the pasta and set aside.
  • 3.   In a skillet, heat a tablespoon of olive oil, add the diced zucchini, shallot, and minced garlic, season with salt and pepper, and cook over high heat for 4 to 5 minutes (until the zucchini cubes are still firm).
  • 4.   Preheat the oven to 375°F (190°C).
  • 5.   In a bowl, mix the pasta with the zucchini, crumble the goat cheese on top, add the heavy cream, and mix well.
  • 6.   You can bake the gratin in individual dishes or one large dish (here individual). Fill the dishes with the mixture, then sprinkle a tablespoon of grated Parmesan on top of each gratin. Bake the pasta and zucchini gratins with fresh goat cheese for about 10 to 15 minutes. Once the gratins are lightly golden, remove them from the oven and serve immediately.

  • 2 tablespoon of thick sour cream
  • 4 tablespoon of grated parmesan
  • 1 garlic clove
  • 1 shallot
