Vegetable Tarte Tatin

Instructions

  • 1.   Wash all the vegetables, then slice them.
  • 2.   Sauté them in olive oil over medium heat for about 20 minutes. Three-quarters of the way through cooking, season and add the herbs.
  • 3.   Preheat the oven to 210°C (410°F).
    Line the bottom of a tart pan with parchment paper, then spread the vegetables on top and press down with a spoon or other utensil to make the top as flat as possible.
  • 4.   Sprinkle Parmesan cheese all over and place the pie crust on top. Fold the edges inside the pan. Prick the crust with a fork and bake for about 30 minutes, until the crust is cooked.
  • 5.   Remove from the oven, flip the tart onto a plate, and serve hot.

  • 2 tablespoon of olive oil
  • 1 pinch of pepper
  • 1 pinch of salt

  • 50 g of grated parmesan
