Instructions

  • 1.   Bring water to a boil in the bottom part of a steamer pot.
  • 2.   Peel, wash, and cut the parsnips into approximately 2 cm cubes. Place them in the perforated part of the steamer pot and season with salt. Place the pot over the boiling water and let them cook for about 20 minutes, until they are very tender.
  • 3.   After that time, heat the milk in a large saucepan. Pass the parsnips through a fine sieve or food mill directly into the saucepan placed over low heat. Mix by gently lifting the mixture with a spatula. Add the oil in a thin stream, while continuing to lift.
  • 4.   Season the puree with salt and add the grated nutmeg. Serve immediately.

  • 20 cl of whole milk
  • 4 tablespoon of olive oil
  • 2 pinch of nutmeg
  • salt (according to taste)
