Vegan, Low GI, and Delicious Pizza Dough by 0sucre_et_igbas

A treat for the whole family! I was super happy because my daughter told me it was the best pizza in the world and that the dough was "so so good". Note that the toppings on the left and right sides of the pizza were different, yes, I adapt a little for the kids. The dough is vegan.

Pizza Vegan Low GI

Preparation time: 10 minutes
Cooking time: 15 minutes
Rest time: 55 minutes

Instructions

  • 1.   150g whole wheat flour T150 (GI=45)
    100g pearled barley flour (GI=30)
    100g oat bran (GI=15)
    1 and a half packets of yeast
    - 2 tbsp olive oil
  • 2.   1. Dissolve the yeast in 3 tbsp warm water and wait for 10 minutes.

    Roll out the dough and add your toppings. Bake for 15 minutes at 200 °C.
  • 3.   2. Mix the 3 flours and salt. Add water, oil, and then the yeast. Knead and add a little water if the dough is too dry.
  • 4.   3. Let it rest for 45 minutes under a cloth at room temperature. Then roll out the dough and wait for another 15 minutes under a cloth.
  • 5.   My non-vegan but low GI toppings: 1 jar of tomato sauce, 3 to 4 slices of ham in strips, 4 mushrooms, some frozen peppers, Crotin de Chavignol cheese, a few green olives, oregano.

  • 100 g of hulled barley flour
  • 100 g of oat bran
  • 2 bag of dried baker's yeast
  • 2 tablespoon of olive oil
  • salt (according to taste)
