THE BEST SUMMER SALAD, fresh, flavorful, and approved by all my friends and family. I have been making this salad every summer for 10 years! It's my favorite. It comes from my friend Florence, whom I tasted it with one day, and since then, I can't get enough of it during melon season. I just added walnuts to her recipe. It is very quick to make: GI information: The GI of melon is about 65, so not really low... but its glycemic load is very low, so you would have to consume a lot for a strong impact on blood sugar. As a result, there is no risk of a glycemic spike, especially since the fiber from the other raw vegetables and the fat from the cheese, walnuts, and olive oil will lower the overall GI of the salad.

Instructions

  • 1.   Cut equal amounts of tomato, cucumber, and melon.
  • 2.   Add cubes of feta cheese (amount according to your taste).
  • 3.   And the essential ingredient, according to me: chopped mint.

    Personally, I add quite a bit to enhance the flavor of the melon.

    And then, I added walnuts, my personal touch that goes really well with it and allows you to get a good dose of omega-3.

    All with just a drizzle of olive oil, and you have a fresh salad that goes perfectly with barbecues and sunshine.
