1. Separate the leaves of the endive, cut them in half widthwise. Peel and wash the lamb's lettuce. Wash the radicchio, tear the large leaves in half. Mix the three types of leaves in a salad bowl.
2. Prepare the dressing by whisking together all the ingredients.
3. Cut the avocados in half. Remove the pit, peel them, and slice them into thin strips. Place them in a shallow plate. Pour the dressing over them. Mix.
4. Peel the oranges, removing the white pith. Slide a sharp knife along the membranes that separate the segments to remove the flesh.
5. Place the pieces on the salad with the avocados. Pour the remaining dressing from the shallow plate over everything.
6. Sprinkle with parsley, distribute the salad, and mix.
