Potato pancake with raclette cheese, pickle sauce

Instructions

  • 1.   Steam the potatoes for about 30 minutes, then mash them.
  • 2.   Heat olive oil in a pan. Add the onion and cook until golden.
  • 3.   Add the onion to the mashed potatoes, then add the flour, salt, and mix. Shape into pancakes.
  • 4.   Put all the vinaigrette ingredients in a bowl and mix.
  • 5.   Heat some olive oil in a pan, gently place the pancake(s) and cook until golden.
  • 6.   Meanwhile, preheat the oven's broiler.
  • 7.   Place the pancake(s) on a baking sheet lined with parchment paper, add the raclette cheese, and broil for 3 to 4 minutes until melted.
  • 8.   Serve with the vinaigrette.
