1. In a pan, heat a spoonful of sunflower oil and add the frozen chopped spinach to it over low heat.
2. Immediately cover with a lid.
3. Meanwhile, in a small bowl, mash the feta with a fork and add the whole egg.
4. Mix everything well, salt and pepper.
5. Once the spinach has thawed, let it cool and drain well in a fine colander for 10 minutes (pressing it with a fork), then mix it with the feta and the egg.
6. Spread the pastry sheets on the work surface and distribute the spinach over each of them, roll them up or prepare them in the shape of a samosa if you know how to do it.
7. The important thing is that each preparation is well closed.
8. Heat a little oil in a pan and fry the puff pastry for a few minutes on each side.
9. (in the oven, it's even easier, if you have one and it's less fatty).
10. Serve warm or cold, as an accompaniment to a salad.
