1. In a pan, heat a tablespoon of sunflower oil and add the frozen chopped spinach over low heat.
2. Immediately cover with a lid.
3. Meanwhile, in a small bowl, mash the feta with a fork and add the whole egg.
4. Mix well, season with salt and pepper.
5. Once the spinach is thawed, let it cool and drain well in a fine sieve for 10 minutes (pressing with a fork), then mix with the feta and egg.
6. Lay the sheets of puff pastry on the work surface and spread the spinach mixture on each of them, roll them up or shape them into samosas if you know how.
7. The important thing is that each preparation is well sealed.
8. Heat a little oil in a pan and fry the puff pastries for a few minutes on each side.

10. Serve warm or cold, as a side dish with a salad.
