Quick Spinach and Feta Puff Pastry

Instructions

  • 1.   In a pan, heat a tablespoon of sunflower oil and add the frozen chopped spinach over low heat.
  • 2.   Immediately cover with a lid.
  • 3.   Meanwhile, in a small bowl, mash the feta with a fork and add the whole egg.
  • 4.   Mix well, season with salt and pepper.
  • 5.   Once the spinach is thawed, let it cool and drain well in a fine sieve for 10 minutes (pressing with a fork), then mix with the feta and egg.
  • 6.   Lay the sheets of puff pastry on the work surface and spread the spinach mixture on each of them, roll them up or shape them into samosas if you know how.
  • 7.   The important thing is that each preparation is well sealed.
  • 8.   Heat a little oil in a pan and fry the puff pastries for a few minutes on each side.
  • 9.   (in the oven, it's even easier if you have one and it's less greasy).
  • 10.   Serve warm or cold, as a side dish with a salad.

Notes & Suggestions

  • IDEA: You can replace the feta with regular grated cheese or another type of cheese... goat cheese, parmesan, camembert, etc... according to taste or fridge ingredients.
  • Puff pastry sheets can be stored in the freezer for future use, in case the package is not used entirely.
